Abstract | The food service industry was identified to be one of the contributors in the increasing concerns on the environment. This study focuses on the green processes of small-scale businesses in the foodservice industry like the grab-and-go food carts/kiosks. Since prices of products offered are affordable, more people especially the young ones buy from these food carts/kiosks. This segment of food service establishment is small in terms of operations but patronized by many because of their accessibility and affordability of their products. This study aims to determine the current environmental policies and practices observed by the employees; examine their knowledge on food service operations and its impact to the environment; relate existing attitude and practices to the Responsible Environmental Behavior (REB); and compare the environmental awareness of employees and customers. The 36 food carts/kiosks and 150 customers were the respondents in five MRT stations in Quezon City. Key informants were also interviewed to validate the policies and procedures implemented in the food carts/kiosks. Results show that there is compliance among the employees on the policies and procedures in the food carts/kiosks. REB namely environmental attitude, intention to act and locus of control was also found present among the food cart/kiosk employees. Customers were found more environmentally aware than the employees which can be attributed to their educational attainment and experience.
