Abstract The study determined food safety practices in handling cooked rice related to proliferation of Bacillus cereus at selected carinderias (n=20) in Quezon City through a face-to-face survey. Belonging in the natural microflora of rice, B. cereus proliferation and intoxication is a food safety risk associated with cooked rice, a commodity regularly consumed by Filipinos offered conveniently in carinderias. To investigate this, the selected carinderias were assessed for their compliance with the Sanitation Code of the Philippines (PD No. 856) to recognize the factors
that may possibly affect the hygiene and safety of the foods in carinderias. An inventory of practices is also established to analyze how cooked rice is prepared and handled. Results showed varying levels of compliance to different provisions of the Sanitation Code. In the inventory of practices, time-temperature abuse which is a principal element for the proliferation and growth of B. cereus is not present.
