| Abstract | As consumer demand for assuring meat quality and safety begins to rise, traceability is explored to potentially reduce information asymmetry and increase consumer confidence in frozen processed meat products. Thus, the study aimed to understand Filipino consumers’ knowledge and expectations on traceability and its influence in their confidence in frozen processed meat products. A structured questionnaire was administered through Google Forms to consumers (n = 402) of frozen processed meat products around the National Capital Region, Philippines and data was analyzed through RStudio software. The results of the study showed that consumers are relatively knowledgeable across different aspects of food traceability (i.e. product name, quality labels) based on the 5-point Likert Scale. However, consumers specifically expected that hygiene and quality control procedures and instructions on reporting food-related concerns shall be included in marketing frozen processed meat products. Moreover, the median of responses revealed that consumer confidence and satisfaction were high in food safety and taste, neutral in sustainability and authenticity, and low in healthiness. A clear understanding of consumers’ knowledge and expectations on traceability has shown that several factors such as the brand, method of production, geographic origin, and safety and quality labels in frozen processed meat products influenced consumer confidence. Further research on the effect of traceability knowledge in consumer confidence in other potentially harmful or emerging food products may be considered. Lastly, the willingness of manufacturers to adjust their product’s information and its feasibility considering potential added costs on production may be reviewed as well. |
