| Abstract | As previous studies revealed that poor food safety (FS) knowledge and practices are more prominent in low-income households, this study aimed to describe the FS knowledge and practices of mothers in low-income households in Iloilo City. The researcher utilized a mixed-method explanatory sequential research design. Mothers from low-income households (N=339) completed the Household Food Safety Questionnaire (HFSQ). The percentage of mothers with “Good” FS knowledge level (79.35%) and “Good” FS practice level (91.74%) were highest in cleaning and sanitation dimension while lowest in food preparation dimension (FS knowledge level=66.96%; FS practice level= 8.26%). The percentage of mothers with “Good” FS practice level (54.42%) were lower compared to “Good” FS knowledge (74.48%), indicating that FS knowledge was not always translated into practice. Chi-square test for independence revealed a significant association between mothers’ FS knowledge level and educational attainment, χ² (4, N=339) = 10.173, p = 0.038 at 0.05 level of significance, while no significant associations were found between FS knowledge and other demographic variables such as age, marital status, household size, employment and FS-related training. It also revealed significant associations between FS practice level and two demographic variables, employment, χ² (2, N=339) = 9.809, p = 0.007 and FS-related training, χ² (1, N=339) = 4.441, p = 0.035 at 0.05 level of significance. Other demographic variables such as age, marital status, household size and educational attainment were found to have no association to FS practice. Pearson’s test for correlation between FS knowledge index and FS practice index revealed a weak, positive correlation, r=0.230, N=339, significant at p<0.001. Factors contributing to the level of FS knowledge and FS practices among mothers were extracted from the six main themes that emerged in the FGD data namely: value for health and safety, food safety-r |
